Instructions

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Finely chop or crush the fresh cranberries and set aside.
  • In a large mixing bowl, combine flour, granulated sugar, baking powder, baking soda, grated orange peel, and salt. Mix well.
  • Cut the chilled butter into the dry mixture until it resembles coarse crumbs.
  • Add the crushed cranberries to the dry mixture, ensuring even distribution.
  • Gradually pour in the cultured buttermilk, mixing until a sticky dough forms.
  • Divide the dough in half. On a lightly floured surface, shape each half into a log, about 12 inches long and 2 inches wide.
  • Place the logs onto the prepared baking sheets, leaving space between them. Brush the logs with melted butter and sprinkle with turbinado sugar.
  • Bake: Bake in the preheated oven for 25-30 minutes or until lightly golden and firm to touch.
  • Cool and Slice: Remove the baked logs from the oven and let them cool for about 10-15 minutes. Reduce the oven temperature to 325°F (160°C). Carefully slice the logs into 1/2-inch slices.
  • Bake Again: Place the sliced biscotti cut-side down on the baking sheets. Bake for an additional 10-15 minutes or until the biscotti are golden and crisp, flipping them halfway through baking.
