  • 4 teaspoons finely chopped fresh ginger
  • 4 teaspoons low-sodium soy sauce
  • 1/2 cup Greek yogurt or avocado mayonnaise
  • 4 tablespoons delicate white miso paste
  • 8 teaspoons seasoned rice vinegar
  • 1/2 cup slivered almonds
  • 1 1/2 cups crispy wonton strips
  • 1 1/2 cups crunchy chow mein noodles
  • 4 teaspoons raw honey
  • 4 teaspoons toasted sesame oil
  • 1/2 cup freshly squeezed orange juice
  • 4 cups shredded cooked chicken breast
  • 2 heads of crisp romaine lettuce chopped

Instructions

  • In a mixing bowl, combine Greek yogurt (or avocado mayonnaise), delicate white miso paste, seasoned rice vinegar, chopped fresh ginger, low-sodium soy sauce, raw honey, toasted sesame oil, and freshly squeezed orange juice.
  • Whisk the ingredients together until the mixture is well combined and smooth. Set the dressing aside.
  • In a large salad bowl, combine the shredded cooked chicken breast, chopped crisp romaine lettuce, and slivered almonds.
  • Pour the prepared dressing over the chicken and lettuce mixture. Toss the salad gently until the dressing coats the ingredients evenly.
  • Sprinkle crispy wonton strips and crunchy chow mein noodles over the dressed salad. These will add texture and crunch.
  • Toss the salad once more just before serving to ensure everything is evenly coated with the dressing.
  • Divide the salad among individual plates or bowls and serve immediately.
  • You can garnish with additional slivered almonds or sesame seeds for extra flavor and presentation.

Notes

  • If you don’t have sesame oil, you can substitute it with olive oil.
  • To make this recipe vegan, you can substitute the chicken with tofu or tempeh.
  • If you want a creamier dressing, you can add a tablespoon of mayonnaise.
  • To add some heat, you can add a teaspoon of chili flakes to the dressing.
