Ingredients

  • 2 cloves garlic minced
  • 6 tsp butter
  • 1/4 cup grated Parmesan cheese
  • 2 lbs. red potatoes
  • 3 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 tsp chopped fresh parsley

Instructions

  • Preheat your oven to a sizzling 425°F.
  • Combine the minced garlic, butter, and Parmesan cheese in a small bowl until everything is blended together.
  • Rinse the potatoes then slice them into 1/4-inch thick circles. Place them in a large mixing bowl and toss with olive oil, salt, and pepper to evenly coat.
  • Spread the potatoes in a single layer on a large baking sheet, then top with the garlic butter mixture. Bake for 15 minutes until golden brown.
  • Remove from the oven and generously sprinkle with chopped parsley. Serve warm and enjoy!

  • Add a layer of bacon on top for an extra dose of smoky flavor.
  • Substitute the Parmesan cheese with other types, such as cheddar or feta.
  • Add a sprinkle of chili flakes for an added kick of heat.
