Begin by combining melted butter and warm milk in a large mixing bowl. Ensure that they are well incorporated before proceeding. Next, add beaten eggs, sugar, and instant yeast to the mixture, making sure all ingredients are thoroughly combined. Gradually incorporate 6 cups of flour into the mixture while continuously mixing until a soft dough forms. Once the dough has reached the desired consistency, transfer it to a floured surface and knead for 5-7 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it with a clean towel, and let it rise for an hour to allow the yeast to activate and work its magic.
In a small mixing bowl, combine cinnamon and brown sugar to create the filling for your Cookie Monster cinnamon rolls. To add a unique twist, crush up some Oreos and mix them in with the other ingredients. Set this mixture aside for later use.
After an hour has passed, it's time to assemble your rolls. Begin by punching down the risen dough and rolling it out into a large rectangle. Evenly spread the prepared filling onto the dough, making sure to leave a small border around the edges. Next, tightly roll up the dough from one of its long edges, creating a log shape. Cut the log into 22 equal slices.
Preheat your oven to 375°F (190°C) while your rolls are given some time to rise for another 30 minutes in a greased baking dish.
Once the rolls have risen, place them in the preheated oven and bake for 20-25 minutes or until they have reached a light golden brown color. While they are baking, prepare the icing by mixing powdered sugar, softened butter, and cream cheese together in a bowl until smooth.
Once the rolls have finished baking, allow them to cool for 5 minutes before drizzling the prepared icing on top. To give your cinnamon rolls their signature Cookie Monster look, add blue food coloring to the icing and use it to draw on eyes and a mouth. For an extra crunch, top with additional crushed Oreos if needed.
