Equipment

  • Wooden cylinder
  • Mixer
  • Measuring cups
  • brush

Ingredients

  • Dough:
  • 10 cups Flour
  • 3 cups Milk
  • 2 tablespoons Fresh yeast
  • 10 tablespoons Unsalted butter room temperature
  • 6 Egg yolks
  • 2 tablespoons Vanilla extract
  • 1 teaspoon Salt
  • Cover & Optional Toppings:
  • 1 cup Honey or sweetener of choice
  • Crushed walnuts
  • Ground cinnamon
  • Coconut flakes
  • Crushed or flaked almonds

Instructions

  • Combine dry ingredients in a bowl.
  • Mix warm milk, butter, yolks, and vanilla into the dry mix.
  • Knead until smooth, then let the dough rise for an hour.
  • Punch down the dough, divide it, roll it into ropes, and wrap it around a cylinder.
  • Sprinkle with sugar and rest for 10-15 minutes while preheating the oven.
  • Bake at 375°F for 20-25 minutes until golden brown.
  • Remove, cool briefly, and slide off the cylinder.
  • Brush with honey and add your preferred toppings.
  • Slice and enjoy while warm or reheat briefly.

Notes

  • Make sure the milk is warm, not hot. Hot milk can kill the yeast, resulting in a flat and dense cake.
  • Don't over-knead the dough as it can cause the gluten to develop too much, making it difficult to shape.
  • For added flavor, you can use flavored extracts such as almond or lemon extract instead of vanilla extract.
  • Experiment with different toppings to find your favorite combination. You can also use chocolate chips, dried fruits, or sprinkles.
