Ingredients

FOR THE CHICKEN

  • 4 boneless skinless chicken breasts
  • 2 tablespoons mustard
  • 2 tablespoons Old Bay seasoning
  • 2 tablespoons apple cider vinegar
  • 1/4 cup vegetable oil

FOR THE SANDWICH

  • 4 buns, toasted if desired
  • 4 slices Finlandia Cheddar Cheese 
  • Sliced tomato
  • Lettuce

FOR THE CRAB SPREAD

  • 1/2 pound lump crab meat
  • 1/4 cup mayonnaise
  • A squeeze of lemon juice 
  • 1/4 cup cream cheese
  • 1 1/2 teaspoons Old Bay seasoning 

Instructions

  • In a medium bowl, combine the mustard, Old Bay seasoning, and apple cider vinegar. Mix together until combined. Add in the vegetable oil and stir to combine everything evenly.
  • Preheat your oven to 375°F and place the chicken in it once it’s reached temperature. Bake for 25-30 minutes, or until the internal temperature reaches 165°F on a meat thermometer.
  • While that’s baking, prepare the crab spread by combining all of the ingredients in a medium bowl and stirring until smooth. Once the chicken is done cooking, let it rest for 5-10 minutes before slicing it into strips.
  • Assemble your sandwiches by toasting buns if desired then adding slices of cheese, followed by tomato and lettuce, chicken, and finally the crab spread. Serve your Chicken Chesapeake sandwich with a side of chips or fries for a complete meal.
