Equipment

  • Mixing bowl
  • Measuring cups
  • Cookie scooper

Ingredients

  • 1 cup butter softened (either salted or unsalted)
  • 4 eggs
  • 1 cup shortening butter flavored
  • 6 tbsp honey
  • 2.5 cups packed dark brown sugar
  • 4 tsp vanilla extract
  • 1 cup granulated sugar
  • 1.5 cups old fashioned oats
  • 6 cups AP flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1.5 cups semi-sweet chocolate chunks
  • 2 tsp salt
  • 1.5 cups milk chocolate chunks

Instructions

  • In a large mixing bowl, cream butter and shortening until fluffy.
  • Combine dark brown sugar, granulated sugar, eggs, honey, and vanilla extract in the same bowl and mix thoroughly.
  • In a separate bowl, whisk together all-purpose flour, old-fashioned oats, baking soda, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, mixing until just combined.
  • Gently fold in semi-sweet and milk chocolate chunks.
  • Chill the dough for at least 30 minutes, or overnight for better results.
  • Preheat the oven to 350°F (175°C).
  • Scoop dough onto a parchment-lined baking sheet, ensuring space for spreading.
  • Bake for 12-15 minutes until the edges are golden brown and the center sets.
  • Cool cookies on the sheet for 5 minutes, then transfer to a wire rack. Enjoy it warm with milk or your favorite beverage.

Notes

  • Make sure your butter and eggs are at room temperature before starting. This will ensure that all ingredients mix evenly.
  • Chill the dough for at least 30 minutes (or overnight) to allow the flavors to meld together and prevent spreading while baking.
  • Use parchment paper or a silicone baking mat on your baking sheet to prevent the cookies from sticking and make clean-up easier.
  • Don't overmix the dough once you add in the dry ingredients. Mix until just combined for soft and chewy cookies.
  • You can customize your cookies by using different types of chocolate or adding in other mix-ins like nuts or dried fruits.
