Instructions
In a large mixing bowl, cream butter and shortening until fluffy.
Combine dark brown sugar, granulated sugar, eggs, honey, and vanilla extract in the same bowl and mix thoroughly.
In a separate bowl, whisk together all-purpose flour, old-fashioned oats, baking soda, baking powder, and salt.
Gradually add dry ingredients to the wet mixture, mixing until just combined.
Gently fold in semi-sweet and milk chocolate chunks.
Chill the dough for at least 30 minutes, or overnight for better results.
Preheat the oven to 350°F (175°C).
Scoop dough onto a parchment-lined baking sheet, ensuring space for spreading.
Bake for 12-15 minutes until the edges are golden brown and the center sets.
Cool cookies on the sheet for 5 minutes, then transfer to a wire rack. Enjoy it warm with milk or your favorite beverage.
Notes
Make sure your butter and eggs are at room temperature before starting. This will ensure that all ingredients mix evenly.
Chill the dough for at least 30 minutes (or overnight) to allow the flavors to meld together and prevent spreading while baking.
Use parchment paper or a silicone baking mat on your baking sheet to prevent the cookies from sticking and make clean-up easier.
Don't overmix the dough once you add in the dry ingredients. Mix until just combined for soft and chewy cookies.
You can customize your cookies by using different types of chocolate or adding in other mix-ins like nuts or dried fruits.
