Equipment

  • Grill
  • Large Ziplock Bag or Plate
  • Bowl

Ingredients

  • ½ pound boneless and skinless chicken 2 chicken breasts
  • ¼ of a juicy fresh lemon lemon juice
  • ½ cup creamy Greek yogurt
  • teaspoon of exquisite sea salt
  • ½ tablespoon of rich red wine vinegar
  • teaspoon of freshly ground black pepper
  • ¼ tablespoon of aromatic dried oregano
  • 2 tablespoons of extra virgin olive oil
  • ¼ tablespoon of fragrant dried thyme
  • optional: parsley or cilantro for garnish

Instructions

  • Prepare Ingredients: Gather all ingredients for a tidy and smooth cooking process.
  • Marinate: In a bowl, combine the creamy Greek yogurt, lemon juice, sea salt, black pepper, red wine vinegar, dried oregano, dried thyme, and extra virgin olive oil. Mix all the ingredients well to form a smooth and creamy marinade.
  • Prepare the Chicken: Place the chicken breasts in a ziplock bag or plate; then pour the marinade over the chicken, ensuring each piece is well coated, then refrigerate for at least 2 hours.
  • Preheat the Grill: Preheat your grill to medium-high heat. Make sure it's clean and lightly oiled to prevent sticking.
  • Grilling: Remove chicken from the marinade, letting excess drip off. Grill chicken for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C). Baste the chicken with any remaining marinade while grilling for added flavor.
  • Rest and Garnish: Once cooked, remove the chicken from the grill and let it rest for a few minutes. This allows the juices to redistribute, keeping the chicken moist.
  • Serve: Slice the grilled chicken breasts and serve them hot. They can be paired with your favorite sides like rice, roasted vegetables, or a fresh salad.
  • Optional: Garnish with chopped parsley or cilantro for a fresh and herbaceous touch.

Notes

  • Make sure to marinate the chicken for at least an hour or two, but up to overnight is even better. This will help the chicken absorb all the delicious flavors of the marinade.
  • Be sure to preheat the grill before grilling the chicken. This will ensure that the chicken cooks evenly and doesn't stick to the grill.
  • To test if the chicken is done, insert an instant-read thermometer into the thickest part of the chicken. The internal temperature should reach 165°F.
  • To keep the chicken from drying out, brush it with a bit of olive oil before grilling.
  • To add a bit of smokiness to the dish, add some wood chips to the grill before grilling the chicken.
