For the Marinade:
- 1 large lemon, zested and then juiced
- 1 teaspoon kosher salt
- 2 tablespoons olive oil
- 1½ tablespoons chopped fresh basil
For the Mushrooms with Lemon Basil Butter Sauce:
- the lemon zest
- 8 ounces sliced mushrooms
- 1 teaspoon kosher salt
- 4 tablespoons unsalted butter
- 1½ tablespoons chopped fresh basil
For the Chicken:
- 4-6 slices of very thinly sliced deli ham
- 1½ pounds boneless skinless chicken breast, thinly sliced or pounded to ½” thick
- 4-6 ounces of goat cheese
Start by preparing the marinade for the chicken: Combine lemon zest, juice, salt, olive oil, and basil in a bowl and mix until everything is combined.
Place the chicken into the marinade, making sure each piece is completely covered with the mixture. Cover with plastic wrap and let the chicken marinate for at least 30 minutes or up to 8 hours.
While the chicken is marinating, prepare the mushrooms with lemon basil butter sauce: Heat a medium-sized skillet over medium heat. Add in the mushrooms and season with salt. Cook until all of the liquid from the mushrooms has evaporated and they are golden brown, about 10 minutes.
Add the butter, lemon zest, and basil to the skillet with mushrooms and stir until everything is combined. Cook for an additional 5 minutes before setting aside. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil, then spray it with non-stick cooking spray.
Place the chicken onto the prepared baking sheet and top each piece with a slice of deli ham, goat cheese, and some of the mushrooms with lemon basil butter sauce.
Bake for 25 minutes or until the internal temperature reaches 165°F (74°C). Serve with a side of your favorite pasta, rice, or vegetables, and enjoy!
• Make sure to pound the chicken breasts to an even thickness so that they cook evenly.
• Use thinly sliced deli ham for best results.
• You can also use pre-cooked bacon if you’d like.
• If you don’t have fresh basil, dried basil will work just as well.
• Goat cheese can be substituted with feta or other types of cheese if desired.
