- 12 oz Fettuccine Pasta
- 1/4 cup Olive Oil
- 6 tsp Unsalted Butter
- 1 lb Large Shrimp
- 8 oz White Mushrooms
- 3 Scallions
- 2 Garlic Cloves Chopped
- ½ cup Parmesan Cheese
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- Salt And Pepper To Taste
- ¼ tsp Crushed Red Pepper Flakes
- 1 cup Heavy Cream
- ½ cup Reserved Pasta Water
- 1 Large Lemon Zest and Juice
Bring a pot of salted water to a boil and add the fettuccine pasta. Cook until al dente (approximately 8-10 minutes). Reserve 1/2 cup of the cooking liquid before draining the pasta.
Heat up olive oil and butter in a large sauté pan over medium-high heat until it just starts to shimmer. Add the mushrooms and cook for 5 minutes, or until they start to brown. Then add the scallions, garlic, onion powder, garlic powder, salt, and pepper. Stir everything together and then cook for an additional 2 minutes.
Add the shrimp to the pan and cook for 3 minutes, or until they just start to turn pink. Lower the heat to low and add in the heavy cream, parmesan cheese, and reserved pasta water. Stir everything together and let it simmer for 5 minutes or until the sauce starts to thicken. Add the cooked fettuccine pasta and stir everything together before turning off the heat. Lastly, toss in some lemon zest, lemon juice, and crushed red pepper flakes. Taste and adjust seasoning accordingly.
Serve the Carrabba's Fettuccine Weesie topped with extra parmesan cheese (optional).
