Equipment

  • Oven, saucepan
  • Baking sheet or grill.

Ingredients

  • 6 tbsp butter
  • 1/2 cup apple cider vinegar
  • 1/4 tsp cloves ground
  • 2 cup water
  • 1/4 tsp allspice ground
  • 1/4 cup white vinegar
  • 1/4 cup cayenne pepper sauce
  • 1 tsp dried thyme
  • 2 tsp parsley flakes dried
  • 4 tsp ground black pepper
  • 1 tsp onion powder
  • 1 tsp salt
  • 2 tsp cornstarch
  • 1 tbsp lemon juice
  • 1/4 tsp rubbed sage
  • 4 tsp Worcestershire sauce
  • 1 1/4 cup dark brown sugar
  • 2 tsp cayenne pepper
  • 1/4 cup green onion minced
  • 1 1/2 cup ketchup
  • 1/4 tsp nutmeg ground
  • 4 lb chicken wings and drumettes

Instructions

  • In a medium saucepan, melt the butter over medium heat.
  • Once the butter is melted, add in the apple cider vinegar, ground cloves, allspice, and water. Stir until well combined.
  • Next, pour in the white vinegar, Frank's cayenne pepper sauce, dried thyme, parsley flakes, ground black pepper, onion powder, salt, and cornstarch. Mix well.
  • Add in the lemon juice and Worcestershire sauce, then continue stirring until everything is well combined.
  • Next, incorporate the dark brown sugar and cayenne pepper into the mixture. Stir until the sugar is fully dissolved.
  • Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 5 minutes, stirring occasionally.
  • After simmering, add in the minced green onion, ketchup, and nutmeg. Stir until everything is combined.
  • Meanwhile, preheat your oven to 425 degrees F. Season the chicken wings and drumettes with garlic powder and place them on a baking sheet. Cook for 25-30 minutes, flipping halfway through.
  • Remove the chicken from the heat and let it cool for a few minutes. Then, generously coat the chicken with the Caribbean Jerk sauce.
  • Finally, serve the delicious Caribbean Jerk chicken wings and drumettes with extra sauce on the side for dipping.

Notes

  • For a smoother consistency, strain the sauce through a fine-mesh sieve before serving.
  • Adjust the amount of cayenne pepper according to your desired level of spiciness.
  • Make sure to flip the chicken halfway through cooking to ensure even browning.
  • For a quicker cooking time, use an air fryer to cook the chicken instead of baking in the oven.
  • This sauce can also be used as a marinade for grilled meats or as a dipping sauce for vegetables.
