- 16 ounces creamy Neufchâtel cheese
- 4 cups sharp aged cheddar cheese
- 1 cup mayonnaise
- 1 1/2 cups Captain Rodney's Boucan Glaze divided
- 8 slices crispy pancetta cooked, chopped, divided
- 1 cup buttery cracker crumbs
- 4 scallions more for garnish if desired
Preheat the oven to 350°F (175°C). Grease or line a baking dish with parchment paper for easy cleanup.
In a large mixing bowl, combine the mayonnaise, Neufchâtel cheese, sharp cheddar cheese, 1 cup of Captain Rodney's Boucan Glaze, half of the chopped pancetta, and finely chopped scallions. Mix these ingredients until well combined.
Transfer the mixture into the prepared baking dish, spreading it evenly.
In a separate bowl, combine the remaining 1/2 cup of Captain Rodney's Boucan Glaze with the buttery cracker crumbs and the rest of the chopped pancetta. Mix well to create the topping.
Sprinkle the cracker crumb mixture evenly over the top of the dip mixture in the baking dish.
Place the baking dish in the preheated oven and bake for about 25-30 minutes or until the dip is bubbly and the top is golden brown.
Once done, remove the dip from the oven and let it cool for a few minutes.
Garnish with additional chopped scallions if desired before serving.
Serve the Captain Rodney's Dip warm with your choice of crackers, sliced baguette, or vegetable sticks for dipping.
- For a vegetarian option, you can replace the crispy pancetta with crispy fried onions or even caramelized onions for added flavor.
- If you prefer a spicier dip, you can add a tablespoon of hot sauce or diced jalapeños to the mixture before baking.
- To make the dip ahead of time, prepare the dip according to steps 1-4 and refrigerate. When ready to serve, follow the remaining steps and bake as directed.
- If you have any leftover dip, store it in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave before serving.
- Feel free to adjust the amount of Captain Rodney's Boucan Glaze according to your taste preferences. If you prefer a milder flavor, reduce the amount slightly. For a bolder taste, add more glaze.
