Equipment

  • Saucepan
  • measuring cups & spoons

Ingredients

  • 1 tsp Worcestershire sauce
  • 4 dozen chicken wings
  • 2 cups of Frank's Red Hot Buffalo Wing sauce
  • avocado oil or canola oil
  • 2 tsp granulated sugar
  • 1 tsp ground black pepper
  • 4 tsp water
  • cup of neutral cooking oil such as avocado oil
  • 4 tsp cornstarch
  • 2 tsp garlic powder
  • 2 egg yolks
  • Kosher salt
  • 1 tsp ground cayenne pepper

Instructions

  • In a saucepan, combine hot sauce, oil, sugar, garlic powder, black pepper, cayenne pepper, Worcestershire sauce, and water. Whisk to combine.
  • Simmer the sauce in the pan over medium heat to melt the flavors.
  • In a separate bowl, whisk together egg yolk and cornstarch until smooth.
  • Slowly pour the egg yolk mixture into the hot sauce, whisking constantly to avoid lumps.
  • Whisk until the sauce thickens and becomes glossy (about 2-3 minutes). Remove from heat and let it cool slightly.
  • Heat neutral oil to 375°F (190°C) in a deep-fryer or large pot.
  • Fry chicken wings in batches to golden brown and crispiness (12-15 minutes).
  • Using tongs, remove the wings and let excess oil drain on paper towels.
  • While hot, toss the wings in the sauce for full coating. Enjoy your saucy chicken wings!

Notes

  • For a milder sauce, reduce the amount of cayenne pepper or omit it altogether.
  • Serve with your favorite dipping sauces, such as ranch or blue cheese dressing.
  • If you prefer a vegetarian option, replace the chicken wings with tofu or cauliflower florets.
  • For an extra crispy exterior, coat the wings in cornstarch before frying.
  • You can also bake the wings instead of frying them for a healthier alternative. Simply place them on a baking sheet and bake at 400°F (205°C) for 40 minutes, flipping halfway through.
  • For a fun twist, try using different hot sauce flavors or adding other seasonings to the sauce, such as smoked paprika or onion powder.
