Ingredients

  • 2 Diced Tomatoes
  • 3 lb Stewing Beef With Fat
  • 3 White Onions, Chopped
  • 3 tbsp extra Virgin Olive Oil
  • 3 lb Stewing Beef With Fat
  • 1 lb Carrots
  • ¾ tsp Garlic Powder
  • 1 ½ lb Red Potatoes
  • Rosemary For garnish
  • Salt To Taste
  • Ground Black Pepper To Taste
  • 5 cups Water

Instructions

  • Preheat the oven to 375 degrees Fahrenheit. In a large pot or Dutch oven, heat the olive oil over medium heat and add the beef, onion, carrots, garlic powder, salt and pepper. Cook for 8 minutes until vegetables are lightly browned and beef is cooked through; stirring occasionally.
  • Add the tomatoes, potatoes, and water. Bring to a simmer then cover the pot with a lid and cook on low for about 2 hours stirring occasionally.
  • Once the stew is cooked through, remove from heat and garnish with rosemary before serving.

Notes

•You can add more vegetables to this recipe if desired such as celery, zucchini, or mushrooms.
•For a richer flavor, you can add some red wine or beef stock to the stew while cooking.
•If the stew is too thick for your liking, add more water or beef broth until it reaches desired consistency.
