Instructions

Step 1: Marinade the Steak

  • Begin by mixing your marinade. In a medium-sized bowl, combine the olive oil, water, cilantro, parsley, minced garlic, lime juice, Kosher salt, black pepper, red pepper flakes, smoked paprika, and honey. Whisk everything together until well blended. Next, take your sirloin steak and place it in a large gallon zip-top bag. Pour the freshly made marinade over the steak, making sure it’s well-coated. Save about two tablespoons of the marinade for later. Allow the steak to marinate at room temperature for about 30 minutes. This not only lets the meat soak in flavor but also brings it closer to a uniform cooking temperature.

Step 2: Preheat the Grill

  • While the steak marinates, it's time to get your grill ready. Fire it up! If you're using a rotisserie attachment, assemble that now. For those of you going the traditional route, prepare your grill for two-zone cooking—a high heat side for searing and a low heat side for gentle cooking.

Step 3: Prep the Steak

  • After 30 minutes, the steak is ready! Make sure to remove it from the marinade and gently shake off any excess. If you’re using a rotisserie, thread the steak onto the spit. Alternatively, if you prefer kebabs, simply dice the steak into cubes and thread them onto skewers. This method gives you a great caramelization and taste throughout.

Step 4: Grill the Brazilian Steak

  • The moment of truth! Place the steak onto the hot grill or the high heat side. Grill for about 8-10 minutes, turning occasionally, until the internal temperature reaches around 120°F for medium-rare. If you’re using a rotisserie, it may take about 30-45 minutes. Brush the reserved marinade over the steak generously while it cooks to keep it moist and flavorful. When you’re approaching five minutes before it's done, you can move the kebabs to the low heat side or continue on the rotisserie until reaching your desired doneness: 125°F for rare, 135-140°F for medium, and 150°F for medium-well.

Step 5: Rest, Slice, and Serve

  • Once the steak is grilled to perfection, remove it and let it rest for a few minutes. This step is crucial! It allows those flavorful juices to settle. For kebabs, simply slide the meat off the skewers onto your serving plate, and voila! You’ve got yourself a beautiful Brazilian barbecue to impress anyone at your next get-together.
