  • 1/2 cup freshly squeezed lime juice
  • 1 liter white rum
  • 1/2 cup fresh mint leaves plus extra sprigs for garnishing
  • 2 limes quartered, plus additional wedges for garnish
  • 2 cups crushed ice plus extra for serving
  • Club soda to top off
  • 1 cup Lime-Mint Syrup
  • Lime-Mint Syrup:
  • 2 cups granulated sugar
  • 2 cups water
  • Zest of 2 limes
  • 1/2 cup fresh mint leaves
  • 1 tbsp honey

Instructions

  • Ready to mix up some magic? Let’s break it down:

Step 1: Make the Lime-Mint Syrup

  • In a medium saucepan, combine 2 cups of granulated sugar and 2 cups of water.
  • Add the zest of 2 limes and 1/2 cup of fresh mint leaves.
  • Heat over medium heat, stirring until the sugar dissolves.
  • Once dissolved, bring the syrup to a gentle simmer for about 5 minutes.
  • Remove from heat. Stir in 1 tbsp of honey until combined.
  • Allow the syrup to cool completely, then strain out the solids.

Step 2: Prepare the Limade

  • In a pitcher, combine 1/2 cup of freshly squeezed lime juice and the lime-mint syrup you just made.
  • Pour in 1 liter of white rum and stir well.
  • Add the 2 cups of crushed ice and stir to combine.
  • Top off the mixture with club soda to your desired fizz level.

Step 3: Serve

  • Fill glasses with additional crushed ice.
  • Pour the limade mixture over the ice.
  • Garnish with the quarter lime pieces and extra mint sprigs.
