- 1/2 cup freshly squeezed lime juice
- 1 liter white rum
- 1/2 cup fresh mint leaves plus extra sprigs for garnishing
- 2 limes quartered, plus additional wedges for garnish
- 2 cups crushed ice plus extra for serving
- Club soda to top off
- 1 cup Lime-Mint Syrup
- Lime-Mint Syrup:
- 2 cups granulated sugar
- 2 cups water
- Zest of 2 limes
- 1/2 cup fresh mint leaves
- 1 tbsp honey
Step 1: Make the Lime-Mint Syrup
In a medium saucepan, combine 2 cups of granulated sugar and 2 cups of water.
Add the zest of 2 limes and 1/2 cup of fresh mint leaves.
Heat over medium heat, stirring until the sugar dissolves.
Once dissolved, bring the syrup to a gentle simmer for about 5 minutes.
Remove from heat. Stir in 1 tbsp of honey until combined.
Allow the syrup to cool completely, then strain out the solids.
Step 2: Prepare the Limade
In a pitcher, combine 1/2 cup of freshly squeezed lime juice and the lime-mint syrup you just made.
Pour in 1 liter of white rum and stir well.
Add the 2 cups of crushed ice and stir to combine.
Top off the mixture with club soda to your desired fizz level.
Step 3: Serve
Fill glasses with additional crushed ice.
Pour the limade mixture over the ice.
Garnish with the quarter lime pieces and extra mint sprigs.
