Equipment

  • Small bowl

Ingredients

  • 10 large eggs at room temperature
  • 2 tablespoons pure vanilla extract
  • 1 vanilla pod seeds scraped out
  • 1 tablespoon ground cinnamon
  • 1 tablespoon orange zest
  • 5 pounds all-purpose baking flour
  • 2 cups full-fat milk
  • 1 1/4 pounds clover blossom honey
  • 1/4 pound active dry yeast
  • 2 3/4 pounds ice-cold butter cut into large cubes
  • 2 tablespoons fine sea salt
  • 1 1/2 pounds coarse pearl sugar or substitute with crushed raw sugar cubes
  • Non-stick cooking spray or melted butter for greasing the waffle iron

Instructions

Step 1: Preparing the Dough

  • In a small bowl, combine the warm milk and active dry yeast. Let this mixture sit for about five to ten minutes until it becomes foamy. This is crucial as it activates the yeast, key to creating the right texture.
  • In a large mixing bowl, whisk together the flour, salt, cinnamon, and orange zest. In a separate bowl, beat the eggs and add honey, vanilla extract, and vanilla pod seeds. Pour the yeast mixture into the egg mixture, stirring until combined.

Step 2: Mixing Everything Together

  • Now, gradually add the dry mixture to the wet mixture. Use a wooden spoon or your hands, mixing until a soft, sticky dough forms. This might take a little time, so don’t rush it. Once combined, fold in the ice-cold butter, a little at a time, until the butter is thoroughly incorporated.

Step 3: Letting It Rise

  • Transfer the dough to a well-greased bowl. Cover it with plastic wrap or a damp cloth and place it in a warm location. Let it rise for about 1.5 hours, or until it doubles in size. You’ll want to check it every now and then to ensure good growth.

Step 4: Shaping the Waffles

  • Once the dough has risen, sprinkle the coarse pearl sugar over the dough and fold it in. This is where the magic happens. The sugar will create those beautiful caramelized bits in your waffles.
  • Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with non-stick cooking spray or melted butter.
  • Divide the dough into equal portions and place one portion in the waffle iron. Cook until golden and crispy, usually about 3-5 minutes.

Step 5: Enjoying the Waffles

  • Once cooked, carefully remove the waffles and let them cool on a wire rack. This will help maintain their texture. Serve them warm with your favorite toppings, and you’ve got yourself a feast!

Notes

  • Do not rush the rising: Allow the dough sufficient time to rise. This step is essential for achieving the perfect texture.
  • Use quality ingredients: The better your ingredients, the better your waffles will taste. Organic eggs and real vanilla make a noticeable difference.
  • Time your cooking: Every waffle iron is different. Keep a close eye on the first few batches to get the cooking time just right.
  • Experiment with toppings: Fresh fruits, syrups, or whipped cream can elevate your waffles even further—mix and match!
  • Make ahead: The dough can be mixed the night before. Just pop it in the fridge and let it rise slowly overnight. This creates deeper flavors.
