Equipment

  • Oven

Ingredients

  • 5 cups sifted all-purpose unbleached flour
  • 1/4 pound 1 stick unsalted butter, softened
  • 2 1/2 cups buttermilk
  • 2 teaspoons of baking powder
  • 1 teaspoon baking soda
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoons sea salt
  • 2 1/2 cups mixed dark and golden raisins soaked in warm water for 15-20 minutes and drained
  • 3 tablespoons caraway seeds
  • 1 large egg lightly beaten
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger

Instructions

Step 1: Preheat Your Oven

  • Begin by preheating your oven to 375°F (190°C). A hot oven will help the bread to rise beautifully and develop that desirable golden crust.

Step 2: Prepare the Dry Ingredients

  • In a large mixing bowl, combine the sifted flour, baking powder, baking soda, sugar, salt, caraway seeds, cinnamon, and ginger. Whisk them together well to ensure even distribution. This is an essential step for flavor uniformity.

Step 3: Cream the Butter

  • In another bowl, cream the softened butter with a hand mixer or stand mixer until it’s light and fluffy. This incorporating of air plays a huge role in the final texture of the bread.

Step 4: Add the Egg and Buttermilk

  • Once the butter is creamy, add the lightly beaten egg and buttermilk. Beat the mixture together until combined, forming a luscious mixture.

Step 5: Combine Dry and Wet Ingredients

  • Carefully pour the wet ingredients into the dry mixture. Stir gently until everything is just combined. Don’t overmix! This could lead to a tough loaf.

Step 6: Fold in the Raisins

  • Now, fold in the soaked and drained raisins gently. This step ensures every bite has a hint of sweetness.

Step 7: Shape and Prepare for Baking

  • Transfer the mixture to a well-greased loaf pan. Smooth the top with a spatula.

Step 8: Bake

  • Place your loaf in the preheated oven. Bake for about 45-55 minutes, or until the bread has a nice golden color and sounds hollow when tapped on the bottom.

Step 9: Cool Down

  • Once baked, remove it from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. This step is vital for achieving the right texture.

Notes

Here are a few tips to ensure your baking adventure is smooth sailing:
  • Use Fresh Ingredients: Always check the expiration dates on your baking powders and buttermilk. Fresh ingredients yield better results.
  • Don’t Skip the Soaking: Soaking the raisins enhances their natural sweetness and ensures they don’t dry out the loaf.
  • Temperature Check: Invest in an oven thermometer. Sometimes, home ovens have discrepancies in temperature.
  • Experiment with Add-ins: Feel free to try other dried fruits like cranberries or apricots for a unique twist on the classic recipe.
  • Slice Smart: Use a serrated knife for slicing. It prevents the bread from squishing down and preserves its lovely shape.
