Equipment

  • grater
  • large mixing bowl

Ingredients

  • 2 large carrots finely grated
  • 1 head of green cabbage finely shredded
  • 3/4 cup premium mayonnaise
  • 2 tablespoons tangy sour cream
  • 2 tablespoons finely chopped sweet onion
  • 2 tablespoons granulated sugar or to taste
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon dry mustard
  • 2 teaspoons celery salt
  • Salt and freshly cracked black pepper
  • 1/4 cup chopped fresh parsley

Instructions

Step 1: Prepare the Vegetables

  • Begin by grating the carrots. You can use the grater on your box grater or even a food processor to save time. Carrots add that nice crunch while providing a gentle sweetness to balance the dish. Then shred the cabbage finely. I find that using almost a whole head of cabbage ensures enough volume so everyone can have a hearty serving. Combine the carrots and cabbage in a large mixing bowl.

Step 2: Create the Dressing

  • In a separate medium bowl, mix together the mayonnaise and sour cream. This combination gives the coleslaw a creamy texture that’s not overwhelmingly rich. Then add the sugar, Dijon mustard, apple cider vinegar, dry mustard, and celery salt. I like to taste the dressing at this point and adjust the sweetness and tanginess based on my preference. Don’t hesitate to play around with the ingredients to find your perfect mix.

Step 3: Combine the Mixtures

  • Once the dressing is ready, pour it over the cabbage and carrots mixture. This step is a game-changer. Toss everything together until the vegetables are well coated. I use two large spoons to gently toss, but feel free to dig in with your hands if you prefer to get a bit messy!

Step 4: Season to Taste

  • Add salt and freshly cracked black pepper to your liking. I believe good seasoning can elevate a dish, and this one is no exception. You might find that a little extra salt helps all the flavors bloom.

Step 5: Add Fresh Parsley

  • Finally, incorporate the chopped fresh parsley. This adds not only a vibrant pop of color but also freshness that complements the creamy nature of the slaw perfectly. Give the mixture another gentle toss.

Step 6: Chill Before Serving

  • To really bring all the flavors together, let your coleslaw chill in the refrigerator for at least an hour before serving. If you can let it sit overnight, even better! The flavors meld together beautifully during this time.

Step 7: Serve and Enjoy

  • When you’re ready to serve, just give it a quick stir and dish it out. I always love seeing the faces of my family and friends light up when they take their first bite. It’s a simple dish, but it never fails to impress.

Notes

  • Cabbage: Choose a fresh head of green cabbage. The crunchiness is essential for that satisfying bite. I always make sure the leaves are crisp and bright.
  • Carrots: Fresh carrots not only add color but also natural sweetness. Grating them finely allows them to mix in seamlessly.
  • Premium Mayonnaise: This is the base for your dressing. Quality mayonnaise offers a richer flavor. I recommend trying a brand you trust.
  • Sour Cream: It enhances the creaminess while adding a slight tang, making it all the more delicious.
  • Sweet Onion: Finely chopped sweet onions are less pungent. This addition is essential for a burst of flavor without overwhelming the dish.
  • Dijon Mustard: This ingredient really amps up the flavor profile. It’s more than just a condiment; it brings acidity and sharpness.
  • Apple Cider Vinegar: This is your acid, balancing all the creamy goodness while cutting through richness.
  • Parsley: Fresh herbs are a must for this recipe. They brighten the dish and add that pop of flavor that elevates everything.
