Ingredients

Spiced Grilled Chicken:

  • 2 teaspoons coarse sea salt
  • 1 teaspoon cracked black pepper
  • 2 teaspoons ground fennel seeds
  • 2 teaspoons ground mustard seeds
  • 2 teaspoons ground cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon Spanish paprika
  • 4 8-ounce boneless, skinless chicken breasts
  • Olive oil for brushing

Herb and Mint Sauce:

  • 2 tablespoons raw honey
  • 2 tablespoons Dijon mustard
  • 6 cloves garlic minced
  • 1 1/2 cups fresh mint leaves tightly packed
  • 3/4 cup fresh flat-leaf parsley tightly packed
  • 2 grilled serrano chiles peeled and finely chopped
  • 1 cup extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • Water as needed to thin the sauce
  • Sea salt and freshly cracked black pepper to taste

Instructions

Step 1: Prepare the Marinade

  • First, let’s create a phenomenal spice mix for the chicken. In a bowl, combine salt, cracked black pepper, fennel seeds, mustard seeds, cumin, smoked paprika, and Spanish paprika. Mix them well.

Step 2: Season the Chicken

  • Take the chicken breasts and brush them with olive oil. After preparing the breasts, rub the spice mixture over each piece, ensuring they are evenly coated. This step is crucial for infusing flavor.

Step 3: Grill the Chicken

  • Preheat your grill to medium-high heat. Once it’s hot, place the seasoned chicken on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F. If you don’t have a grill, you can always use a grill pan on your stovetop!

Step 4: Make the Herb and Mint Sauce

  • While the chicken is grilling, it’s time to whip up that incredible sauce. In a food processor, combine raw honey, Dijon mustard, minced garlic, mint leaves, parsley, grilled serrano chiles, olive oil, and lime juice.
  • Process until smooth, adding water to reach the desired consistency. Season with salt and pepper to taste.

Step 5: Serve It Up

  • Once the chicken is cooked, take it off the grill and let it rest for a few minutes. Slice the chicken and serve it drizzled with the herb and mint sauce. Garnish with some extra herbs for a pop of color.
