Equipment

  • Oven

Ingredients

  • 6 boneless skinless chicken thighs
  • 2 cups full-fat Greek yogurt
  • 1/2 cup melted clarified butter ghee
  • 3 tablespoons ancho chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander seeds
  • 2 teaspoons ground fennel seeds
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cloves
  • 1 teaspoon ground chile de arbol or cayenne pepper
  • 1 teaspoon freshly cracked black pepper plus extra for seasoning
  • 2 garlic cloves minced
  • 1 tablespoon freshly minced ginger
  • Salt to taste
  • 1 tablespoon honey adds a touch of sweetness to balance the spices
  • 1 tablespoon fresh cilantro chopped (for a fresh garnish)

Instructions

Step 1: Prepare the Marinade

  • Start by combining the Greek yogurt, garlic, ginger, honey, and all the spices in a large bowl. Whisk until thoroughly blended. This mixture will serve as the foundation of flavor.

Step 2: Marinate the Chicken

  • Add the chicken thighs to the marinade, ensuring each piece is coated well. Cover the bowl with plastic wrap or transfer everything to a zip-top bag. Allow it to marinate for at least two hours, or overnight if you can—you’ll thank yourself.

Step 3: Preheat Your Oven

  • Heat your oven to 400°F (200°C) while the chicken marinates. A properly heated oven ensures a perfect roast.

Step 4: Sear the Chicken

  • Heat ghee in a large oven-safe skillet over medium-high heat. Once hot, add the chicken thighs, cooking for about 5 minutes on each side until browned. This helps to lock in those amazing flavors.

Step 5: Roast the Chicken

  • Transfer the skillet to the oven carefully. Bake for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). This method guarantees juicy chicken while developing a beautifully caramelized exterior.

Step 6: Final Touches

  • Once out of the oven, sprinkle with fresh cilantro and let it rest for a few minutes before serving. This lets the juices redistribute and keeps the chicken moist.

Notes

  • Use bone-in chicken thighs if you prefer more flavor. Just adjust cooking time accordingly.
  • Don’t skip the marination step! This is where most of the flavor develops.
  • For less heat, reduce or omit the cayenne pepper.
  • Pair with lemon wedges on the side for an additional flavor boost.
  • Experiment with additional spices like garam masala for a unique twist.
