Ingredients

  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 3 cloves garlic
  • 1 pound ground beef
  • 4 cups beef broth
  • 1 cup diced tomatoes

  • 1 tsp dried rosemary
  • Salt and pepper
  • Fresh parsley

Instructions

  • Gather the necessary ingredients and equipment.
  • In a large pot, heat oil over medium-high heat. Add the chopped onion, carrots, celery, garlic cloves, and ground beef, and season with salt and pepper. Stir occasionally until the beef is cooked through.
  • Pour in the beef broth, diced tomatoes, thyme, and rosemary. Bring the mixture to a boil then reduce heat to low. Simmer for 20 minutes or until the vegetables are tender.
  • Taste and adjust seasonings as needed. Ladle the soup into bowls and garnish with fresh parsley leaves. Serve warm and enjoy!
