  • cup 142g dark brown sugar (or use light brown sugar for a milder flavor)
  • ½ teaspoon ground cardamom introduces a subtle citrusy-spice kick
  • 1 ½ tablespoons Ceylon cinnamon for a delicate, sweet-spiced taste

For the Cream Cheese Frosting:

  • 3 tablespoons unsalted butter softened
  • ½ teaspoon vanilla bean paste for a more intense vanilla flavor
  • 4 oz 112g softened cream cheese
  • 1 tablespoon maple syrup adds depth and a hint of caramel-like sweetness
  • ¾ cup 85g confectioners’ sugar

Instructions

  • Let’s break this down into manageable steps. We’ll make it as easy as pie—err, I mean cinnamon rolls!

Step 1: Prepare the Dough

  • Start by activating your yeast. Combine the warm milk and yeast in a bowl. Let that sit for about 5-10 minutes until creamy. In a large mixing bowl, whisk together the flour, sugar, salt, and nutmeg. Create a well in the center.
  • Add in the yeast mixture, melted butter, egg, and yolk. Mix until a dough forms. Knead on a floured surface for about 8-10 minutes until smooth and elastic.

Step 2: Let the Dough Rise
