  • cup packed light brown sugar for extra depth of flavor
  • ¼ teaspoon ground cinnamon to bring warmth
  • 3 ripe bananas mashed (about 1½ cups total)
  • 1 teaspoon baking powder for that fluffiness
  • cups old-fashioned rolled oats for the base
  • ½ teaspoon fine sea salt enhancing all the flavors
  • ½ teaspoon pure vanilla extract because it makes everything better!

Instructions

Step 1: Prepare Your Ingredients

  • Prepping ahead makes everything coherent. Grab ripe bananas and mash them in a bowl until they resemble a smooth paste. Ripe bananas, with their brown spots, offer the best flavor. In another bowl, combine your oats, baking powder, cinnamon, and salt. Set these dry ingredients aside for later.

Step 2: Mix the Wet Ingredients

  • In a separate large bowl, whisk together your beaten eggs, mashed bananas, milk (whatever you choose), maple syrup (or honey), and vanilla extract. The goal here is to create a creamy mixture that feels smooth and inviting. Think of a cozy hug!

Step 3: Combine and Fold

  • Next, add the dry ingredients into the wet ingredients. Stir gently. At this point, it’s time to fold in the nuts. If you want chocolate chips, feel free to sneak some in here! Then, give it another good stir until everything is fully integrated.

Step 4: Prepare the Baking Dish

  • Preheat your oven to 350°F (175°C). As it warms, grease a baking dish with nonstick spray, butter, or a splash of olive oil. I personally enjoy the flavor that butter adds. Pour your oat mixture into the prepared dish, ensuring it’s evenly spread out.

Step 5: Bake to Perfection

  • Pop the dish into your oven and let it bake for about 30-35 minutes. The smell will waft through your home. The top will become golden, and your baked oatmeal will take on a delightful texture. When you think it's ready, insert a knife into the center. If it comes out clean, you’re good to go!

Step 6: Cool, Slice, and Serve

  • Let your banana baked oatmeal cool for a few minutes after it comes out of the oven. Then slice it up and serve. Depending on your taste or dietary needs, consider toppings like yogurt, additional banana slices, or a drizzle of honey.

Notes

  • Swap the Nuts: If you're not a nut fan, try seeds instead. Chia or sunflower seeds can add great texture and nutrition.
  • Mix in Berries: Don’t hesitate to throw in a handful of your favorite berries right before baking. They add a fantastic burst of flavor!
  • Adjust for Sweetness: Test your bananas. If they’re perfectly ripe, you might need less additional sugar than suggested in the recipe.
  • Serve Warm: It’s delightful warm. The flavors meld beautifully, and the texture hits just right.
