Ingredients

  • 1 lb pasta
  • 1/2 teaspoon kosher salt
  • 1 jalapeno minced
  • 3/4 cup heavy cream
  • 3 tablespoons jerk seasoning
  • 1/4 cup chopped parsley
  • 1 red bell pepper
  • 2 tablespoons extra virgin oil
  • 1/2 cup parmesan freshly grated
  • 1/3 cup green onions sliced
  • 1/2 cup chicken broth low-sodium
  • 3 cloves garlic

Instructions

  • Cook the pasta according to the package directions. In a large skillet, heat oil over medium-high heat. Add garlic and jalapenos, and cook for 1 minute.
  • Add jerk seasoning, red bell pepper, and chicken broth. Bring to a simmer and cook until vegetables are tender (about 5 minutes).
  • Add heavy cream and bring to simmer. Cook for 1-2 minutes until the sauce thickens. Add cooked pasta to the skillet and stir to combine.
  • Stir in parsley, Parmesan cheese, and green onions. Serve with extra Parmesan cheese on top, if desired.

• Use low-sodium chicken broth to reduce the salt in the dish.
• Don’t forget to let your pasta cool before adding it to the skillet.
