Cajun Seasoning
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon celery seed
- 1 teaspoon onion powder
- ½ teaspoon black pepper
- ½ teaspoon dried parsley
Chicken and Shrimp
- 1 pound medium shrimp peeled and deveined
- 2 tablespoons extra virgin olive oil divided use
- ½ cup unsalted butter divided use
- 1 teaspoon dried parsley
- 1 cup baby bella mushrooms sliced
- 4 boneless skinless chicken breasts
- 1 tablespoon minced garlic
- 1 white onion sliced
- ¼ cup fresh parsley
In a small bowl, mix together the smoked paprika, dried oregano, garlic powder, celery seed, onion powder, black pepper, and dried parsley to make your Cajun Seasoning. Set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2 minutes, stirring occasionally. Remove the shrimp from the pan and set aside.
Add the remaining 1 tablespoon of olive oil to the skillet. Add ½ cup of butter and melt until bubbly. Once melted, add in the dried parsley and mushrooms and sauté for 2-3 minutes.
Add the chicken breasts to the pan and season with some of the Cajun Seasoning. Cook for 6-8 minutes, flipping halfway through, until cooked through.
Add the bone broth and minced garlic to the skillet and stir to combine. Let it simmer for 2-3 minutes.
Add the cooked shrimp and sliced onions to the skillet and stir to combine. Cook for an additional 3-4 minutes, stirring occasionally.
Stir in the remaining ¼ cup of butter and sprinkle with fresh parsley. Serve immediately over rice or pasta.
- Make sure to season the chicken breasts with Cajun Seasoning before cooking them.
- To make this dish even spicier, add a pinch of cayenne pepper or red pepper flakes to the sauce.
- For best results, use fresh parsley as a garnish. Dried parsley can be used in the sauce, but it won’t have the same flavor and aroma as fresh parsley.
- If you don’t have bone broth, you can use chicken or vegetable broth instead.
