- 100 grams of high-quality all-purpose or bread flour
- 4 large free-range eggs
- 150 grams of fine granulated sugar
- 1 tsp of aromatic vanilla sugar or a splash of exquisite vanilla extract
- 250 grams of decadent dessert chocolate
- 2 tsp of premium instant yeast
- 2 tsp of artisanal butter melted to perfection
- 100 grams of melted artisanal butter
- 100 grams of sifted icing sugar
- 100 grams of velvety heavy whipping cream
- 40 grams of indulgent Kirsch liquor
- A pinch of sea salt to elevate the flavors to perfection
- 6 tsp of cornstarch for that flawless texture
Preheat your oven to 350°F (175°C).
In a bowl, beat the eggs and add the fine granulated sugar. Mix until light and fluffy.
Add the melted butter and vanilla sugar (or vanilla extract), continuing to mix.
Sift in the flour, instant yeast, and a pinch of sea salt. Gently fold until the batter is smooth.
Divide the batter evenly between two greased and floured cake pans.
Bake in the preheated oven for approximately 25-30 minutes or until a toothpick inserted comes out clean.
Allow the cake layers to cool completely.
Melt the dessert chocolate using a double boiler or in the microwave.
In a separate saucepan, heat the heavy whipping cream until it just begins to boil.
Pour the hot cream over the melted chocolate and stir until smooth. Let it cool to room temperature.
Place one cake layer on a serving plate. Brush the top with a mixture of melted artisanal butter and Kirsch liquor.
Spread a layer of chocolate ganache over the first cake layer.
Place the second cake layer on top and repeat the butter-Kirsch mixture and chocolate ganache.
Use the remaining chocolate ganache to frost the sides and top of the cake.
Mix sifted icing sugar with a little Kirsch liquor to make a smooth icing. Decorate the cake with this icing.
Optionally, use a piping bag to create decorative patterns on the top of the cake.
Refrigerate the Black Forest Cake for a few hours to allow the flavors to meld and the ganache to set.
